Take your butt, and leave the bone in as it cooks faster, and is maybe more tender, or boned and rolled, slather it with French’s mustard, coat in your favorite dry rub, let it get tacky for about 2 hours (4 – 5 lb. butt).

Smoke it over apple (or whatever you like best), and let the temperature run at 225 – 250 F. for about 2 hours/ lb. to an internal temp of about 180 F.

Mop 00004000 with a great sauce or spray with bourbon and apple juice in the last hour or 1-1/2 hours. Remove and wrap in foil when finished and leave on heat for another hour while coals die down.

Let sit at least 1/2 hour, then shred it for succulent and flavorful meat — you just can’t miss.

For the best results, get an instant-read thermometer which is very useful for many things, and as long as you get the internal temp up to 180 F. you should be all right, front to back, top to bottom of butt.

Try adding club soda on pork butt when sitting overnite in the fridge.

You can also use pork shoulder, and do it this way ..

The cooking temperature for a pork shoulder really needs to be 275-300 degrees. As far as a good rubbing sauce goes, .just apply a fine layer of salt on the shoulders prior to cooking to:

a) help the shoulder to brown

b) help to open the pours to allow the excess grease to properly drain. You should also start the shoulder cooking on the “face” side ( opposite of the skin side ) for the first 2 hours, and then rotate every hour after that. The shoulder should be done in 10 hours. A good way to tell if the meat is done is to stick a meat-fork in the end of the shoulder and there should be no resistence when pulling the fork out.

After the meat is smoked and ready to pull, have the sauce ready. While still hot, pull the meat and put it into a container and pour the sauce over it.

Being hot, the sauce will get into the interstices of the meat. Let it sit overnight in the refrigerator. Next day, gently reheat the Q in a double boiler or steam table taking great care not to re-heat the meat too fast.

The results? A delicious pork shoulder!

      INGREDIENTS
      * 1 1/2 pounds lean ground beef
      * 1 1/4 cups dry bread crumbs
      * 1 egg
      * 3 tablespoons grated onion
      * 1 (1 ounce) package dry Ranch-style dressing mix
      Sauce
      * 1 cup ketchup
      * 2 tablespoons apple cider vinegar
      * 3/4 cup cola-flavored carbonated beverage
      * 1/2 cup chopped onion
      * 1/2 cup chopped green bell pepper
      * 1 teaspoon seasoning salt
      * 1/2 teaspoon ground black pepper
      * 1 tablespoon Worcestershire sauce

      DIRECTIONS

      1. Preheat the oven to 375 degrees F (190 degrees C).
      2. In a large bowl, mix together the ground beef, bread crumbs, egg, grated onion and Ranch dressing mix until well blended. Shape into 1 inch meatballs, and place on a 10×15 inch jellyroll pan, or any baking sheet with sides to catch the grease.
      3. Bake for 30 minutes in the preheated oven, turning them over half way through. While the meatballs are roasting, mix together the ketchup, cider vinegar, cola, chopped onion and green pepper in a slow cooker. Season with seasoning salt, pepper, and Worcestershire sauce.
      4. Remove meatballs from the baking sheet, and place into the sauce in the slow cooker. Cover and cook on Low for 3 hours, then remove the lid and cook for an additional 15 minutes before serving.

      I have also bought frozen meatballs and added them to this sauce and they are almost as good plus they take no time at all. The cola sounds weird but this recipe is really good.       BBQ Sauce

      1 Quart Ketchup
      1-1/2 Tbsp crushed red pepper
      1 cup sugar
      ¾ cup Vinegar
      ¾ cup Water
      ¼ Small bottle worcheshire sauce
      “to taste” Maple pancake syrup
      1-1/2 Tbsp mustard

      Heat until all sugar and syrup is melted together and everything looks blended well. This stores very very well!

      I just made a batch of this a couple weeks ago. It’s the best BBQ sauce I have made. Much better than you can buy in a bottle.

      1/4 cup vegetable oil
      1 cup minced onions
      1/2 cup minced green peppers
      1 jalapeno pepper, seeded and minced
      1 pinch kosher salt
      1 pinch black pepper
      2 tablespoons minced garlic
      1 (28 ounce) can tomato sauce
      2 cups ketchup (preferably Heinz)
      1 cup water
      3/4 cup worcestershire sauce
      1/2 cup cider vinegar
      1/4 cup lemon juice
      1/4 cup molasses
      1/4 cup cayenne pepper sauce
      1/4 cup spicy brown mustard
      3/4 cup dark brown sugar, packed
      1 tablespoon chili powder
      2 teaspoons fresh coarse ground black pepper
      1/2 teaspoon ground allspice
      1 tablespoon liquid smoke (optional)

      Pour the oil into a large saucepan over medium-high heat.
      After oil has heated, add the onions, green peppers, and jalapenos and stir.
      Add a pinch of sa1t and pepper and cook until vegetables are soft and onions are golden.
      Add the garlic and cook for 1 minute more. Add remaining ingredients except the Liquid Smoke.
      Bring to a boil, then lower the heat so the sauce simmers.
      Simmer for 10 minutes.
      Turn off heat, add the Liquid Smoke and let the sauce cool.
      Pour it into a container, cover, and store in the fridge until ready to use.

    I had an old bottle of Grandma’s Molasses (2005/2006ish) with a bbq recipe on the back. I don’t have the bottle anymore and can’t find the recipe. It only had vinegar, molasses, and maybe one more ingredient. Does anyone know of it?
    It’s not the recipe that Grandma’s Molasses advertises now. It’s from an old bottle. It only has 2-4 ingredients.

      This is my recipe, compiled from several other recipes I’ve found. I picked the tastes I liked the most in the amounts that suit my taste and this is what I ended up with. Careful with the Chipotle – it can be HOT. Start with a small amount and add more after cooking if you need more heat.

      Chipotle Barbecue Sauce
      1 T vegetable oil
      1 small onion, finely chopped
      2 cloves garlic, minced
      2 cups ketchup
      1/3 cup brown sugar
      1 T Worcestershire
      1 T dry mustard
      1 T vinegar
      1-2 T chipotle paste (see note)
      1 t Italian seasoning

      Saute the onion and garlic in oil for 5-10 minutes or until tender. Add the remaining ingredients and cook for an additional 15 minutes. Use a stick blender to puree the sauce. Makes about 2.5-3 cups of sauce.

      Chipotle paste – blend 1 7-ounce can chipotle peppers in adobo sauce with ½ can water until smooth. Freeze any remaining in ice cube trays for use in salsa, chili or beef jerky marinade.

    I’m looking for an easy recipe for BBQ Pulled Pork sandwiches. preferably a slowcooker recipe… I like sweet and sticky sauces not spicey zesty ones. I have an envelope of McCormick’s Slow Cookers BBQ Pulled Pork Seasoning, but not sure of it… Anyone use this?

      Here’s one that you’ll be sure to like:

      Christopehr’s Pulled Pork Sandwiches

      I -18 oz bottle BBQ sauce
      1 – 15 oz can peaches or apricots, in water or syrup, drained
      1 – 8 oz jar Hosin sauce (in the Asian Section of the grocery)
      1/2 cup honey

      METHOD:

      In a blender combine all ingredients. Set aside.

      In a slow cooker, place a 4-5 pound Pork Boston Butt or Picnic Shoulder, cut to fit if necessary. Pour 3/4 contents of blender onto pork. Cover and cook on HI for 4 hours, then turn to LOW for 4 hours…..Remove pork from slow cooker and with 2 forks, shred meat to the consistancy that you like.

      Transfer to a large baking dish, preheat oven to 450. Pour desired amount of sauce over the now shredded pork. Bake in 450F oven till pork starts to sizzle. Remove and serve on your choice of buns with pickles and cole slaw if desired…..Baked beans are a great side with this dish…..Enjoy!!!

      Accompaniments/Sides:

      Sturdy buns of your choice (like Kaiser or Onion Rolls)
      Sweet pickle slices
      Homemade or Prepared Cole slaw
      Baked Beans
      Mac and Cheese (if you really want to go for it!!!)

    Does anyone have a good recipe for bbq sauce? I’m making pork bbq in the crock pot, and I want a really delicious sauce to go with it. Nothing too spicy, as my 3 and 2 year old sons will be eating it as well!

      I whipped up some last night as I didn’t have any. This is what I did:

      1 sm can tomato paste
      3 TBS molasses
      2 TBS maple syrup
      4 TBS dijon mustard
      2 TBS mustard powder
      1 Tsp onion salt
      1 tsp garlic powder
      1/2 cup water
      2-3 TBS olive oil
      salt & pepper to taste

      You could also add a dash of worchestshire, and you could do all dijon if you don’t have the powder.

      If you don’t have molasses and/or maple syrup, add a few TBS of brown sugar. You could also add a few drops of liquid smoke if you like that smoky flavor.

      This version isn’t spicy at all.

      I just mixed it all in a sauce pan over medium low heat, until it was heated through.

      If it’s too thick, add more water and/or oil.

      This made a little over a cup of sauce, so double if needed.

      Ingredients
      2 tablespoons chopped garlic
      2 tablespoons chopped ginger
      2 serrano chiles, de-stemmed, minced
      2 tablespoons, rinsed fermented black beans
      2 medium red onions, roughly chopped
      1 tablespoon sambal
      2 cups chopped fresh tomatoes (3 medium tomatoes) or drained whole roma tomatoes
      1/4 cup rice wine vinegar
      1/2 cup sweet soy (kechap manis) or 1/4 cup soy with 1/4 cup sugar
      Canola oil to cook
      Salt and black pepper to taste

      Method:
      In a skillet coated with oil, saute the garlic, ginger, chile, fermented beans and onions until brown, about 8 minutes. Add the sambal and tomatoes and stir. Deglaze with vinegar and add the soy. Simmer on very low heat for 15 minutes. Season and check. Using a hand blender or a food processor, blend thoroughly and re-check for seasoning. Chill.

      1 Pork loin, back ribs (at least 8 ribs, 3 to 5 pounds)
      1 free range chicken, broken down on the bone
      12 large shrimp, de-veined, peeled with tail on
      BBQ sauce
      For the ribs, cut in half if necessary to fit steamer. Season ribs with salt and pepper and steam for 45 to 60 minutes. The ribs should be fully cooked and softened. Prepare a medium-hot oiled grill. Season the ribs, chicken and shrimp then dip in the BBQ sauce and place on grill. Watch carefully and have a spray bottle of water handy to squelch flare ups. Rotate and turn the proteins often and brush with additional BBQ sauce. The shrimp will take only 8 minutes, the ribs and chicken about 15 minutes.

    I love making shiskebob, throw just about everything on one too, but bacon is the secret ingredient that makes it all taste great, plus I marinate it all too, usually in olive oil, vinegar, worcestershire sauce and spices.

      Dry rubbing a pork shoulder roast, using indrect heat method, cook on bbq. for about 12 hrs.( I do it over night) Remove from bbq., and let cool, till can you handle. Pull the pork, (i use 2 big forks) add bbq., sauce, to your liking, put bbq. pork on a bun, and enjoy.

      SERVES 4 , 1/2 cup
      Ingredients
      1/2 small onion, very finely chopped
      1 garlic clove, minced
      1/2 cup ketchup
      1 tablespoon brown sugar
      1 tablespoon worcestershire sauce
      1 tablespoon cider vinegar
      2 tablespoons dry mustard
      2 tablespoons chili powder
      1/4 teaspoon salt
      1/4 teaspoon pepper
      Directions
      1. Combine all ingredients& mix very well.
      2. Store in refrigerator.

    I am looking for a recipe for a candied bbq sauce for beef or pork ribs. Any help would be appreciated.

      BEST BBQ GRILLED RIBS (SIMPLE)

      2 racks of ribs
      salt and freshly ground pepper, to taste
      1 bottle honey bbq sauce
      water
      1/8 cup olive oil
      aluminum foil
      grill

      Start off by placing ribs in a glass casserole dish, rub with oil and then with salt and pepper. Now flatten ribs as much as possible and add water just to barely cover them. Ribs racks may be cut in half if needed).
      Simmer in oven for 1 to 1 1/2 hours or just until tender; (don’’t try to cook them too fast or they will become tough).

      When ribs are finished in the oven, drain them, start grill on medium and allow to heat.

      Cover with foil and brush (or pour) on just a small amount of oil to keep ribs from sticking/burning. Brush on first layer of bbq sauce after draining.

      Once grill is heated, place ribs on grill. Cook covered for 5-10 minutes, then brush on bbq sauce. Grill another 5-10 minutes, keep adding bbq sauce until there is a thick layer of bbq sauce.

      If ribs become somewhat dark, that’s ok; the bbq sauce tastes better cooked than raw. When bbq sauce is all gone, the ribs are almost done.

      Grill 5 more minutes to finish cooking bbq sauce, then serve. If they stick a little it is ok, that is what the oil and foil is for!!

      ORANGE-GINGER CHICKEN
      (you could probably do beef, why not?)

      1 fryer, cut up
      1 c. orange juice
      1/2 c. BBQ sauce
      2 tbsp. brown sugar
      Dash Tabasco sauce
      1 tbsp. chopped candied ginger
      1 sliced orange
      Rice

      Flour chicken; salt and pepper; brown in small amount of oil; drain well.
      Combine next 5 ingredients. Pour over chicken; simmer 30 minutes, covered. Layer orange slices on top; simmer uncovered 10 minutes. Serve over rice.

      2 whole slabs pork baby back ribs
      Dry Rub:
      8 tablespoons light brown sugar, tightly packed
      3 tablespoons kosher salt
      1 tablespoon chili powder
      1/2 teaspoon ground black pepper
      1/2 teaspoon cayenne pepper
      1/2 teaspoon jalapeno seasoning
      1/2 teaspoon Old Bay Seasoning
      1/2 teaspoon rubbed thyme
      1/2 teaspoon onion powder

      Braising Liquid:
      1 cup white wine
      2 tablespoons white wine vinegar
      2 tablespoons Worcestershire sauce
      1 tablespoon honey
      2 cloves garlic, chopped

      Preheat oven to 250 degrees.
      In a bowl, combine all dry ingredients and mix well. Place each slab of baby back ribs on a piece of heavy-duty aluminum foil, shiny side down. Sprinkle each side generously with the dry rub. Pat the dry rub into the meat. Refrigerate the ribs for a minimum of 1 hour. In a microwavable container, combine all ingredients for the braising liquid. Microwave on high for 1 minute.

      Place the ribs on a baking sheet. Open one end of the foil on each slab and pour half of the braising liquid into each foil packet. Tilt the baking sheet in order to equally distribute the braising liquid. Braise the ribs in the oven for 2 1/2 hours.

      Transfer the braising liquid into a medium saucepot. Bring the liquid to a simmer and reduce by half or until of a thick syrup consistency. Brush the glaze onto the ribs. Place under the broiler just until the glaze caramelizes lightly. Slice each slab into 2 rib bone portions. Place the remaining hot glaze into a bowl and toss the rib portions in the glaze.

      *This recipe makes several batches of dry rub. If more rub is needed, it can be extended by any amount, as long as the ratio of 8:3:1:1 remains the same

      Makes about 3 ½ cups

      This is a Kansas City-style sauce that comes straight from the master. Remember: this is strictly for dabbing on once your ribs or chicken are done cooking, not for slathering over the meat while it cooks.

      You’ll need:

      2 cups ketchup
      1 cup dark molasses
      ½ cup white vinegar
      1 teaspoon chili powder
      1 teaspoon paprika
      1 teaspoon onion powder
      1 teaspoon garlic powder
      ½ teaspoon ground allspice
      ½ teaspoon ground cinnamon
      ½ teaspoon ground mace
      ½ teaspoon freshly ground black pepper
      ¼ teaspoon liquid smoke

      Combine all the ingredients in a saucepan over low heat. As soon as the molasses dissolves, you’re done. Store in a covered glass jar or plastic container in the refrigerator for up to a month.

      To finish off his barbecued meats, Dr. BBQ takes a couple cups of Thick and Sticky BBQ Sauce, adds about a half-cup of honey and a big jolt of hot sauce, and lets the mix simmer in a saucepan for about 10 or 15 minutes. As the meat comes off the grill, use a pair of tongs to dip it in this very sweet, very sticky, very tasty concoction. If you like sweet with your meat, you’ll fall in love with this.

      There are, of course, as many recipes for BBQ sauce as there are BBQ cooks.

      Basic BBQ Sauce
      1 cup ketchup
      1 tablespoon mustard
      3 tablespoons Worcestershire sauce

      1 tablespoon ground black pepper

      Southwestern Barbecue Sauce, recipe follows

      Place the ribs in a large Dutch oven or stockpot. Cover with water and add the crab boil, 2 teaspoons of the salt, and the bay leaves. Bring to a boil. Reduce the heat and simmer for 15 minutes. Remove from the heat and drain.
      In a bowl, combine the sugar, paprika, chili powder, black pepper, remaining tablespoon of salt, and cayenne. Pat the ribs dry and rub well with the spice mixture.

      Lightly oil the grill rack on a barbecue grill, and preheat to medium-low (about 250 to 275 degrees F). Arrange the ribs on the rack and cover (with foil or upside down hotel pan). Cook, turning every 20 minutes, until tender, about 2 hours, replenishing charcoal as needed. During the last 20 minutes of cooking time, baste the ribs with the sauce, turning twice. Remove the ribs from the grill and serve the ribs with remaining sauce and fried pork rinds.

      If you want to make this dish in the oven: After rubbing ribs with spice mixture, place them in a preheated 350 degree F oven for 10 minutes. Remove. Slather ribs with BBQ sauce, wrap in heavy-duty plastic wrap, then wrap in foil, and return to the oven to bake for 1 1/2 hours.

      Southwestern Barbecue Sauce:
      2 tablespoons olive oil
      1 cup chopped yellow onions
      1 tablespoon minced garlic
      3 tablespoons chopped chipotle chiles in adobo, with adobo sauce
      1/2 cup red wine vinegar
      2 tablespoons fresh lime juice
      4 cups tomato sauce
      1/2 cup molasses
      2 teaspoons dry mustard
      2 bay leaves
      1/2 teaspoon salt

      In a medium saucepan, heat the oil over medium-high heat. Add the onions and cook until the onions are lightly caramelized, 4 to 5 minutes. Add the garlic and chiles, and cook for 1 minute. Deglaze the pan with the vinegar and lime juice and cook until the liquid is reduced by half, 1 to 2 minutes. Add the adobo sauce, tomato sauce, molasses, mustard, bay leaves and salt. Bring to a simmer and cook until thick, stirring occasionally, 15 to 20 minutes. Remove from the heat and strain.
      Yield: 4 cups

      a pinch of cayenne pepper
      1/4 teaspoon each thyme and marjoram
      a generous pinch of rubbed sage
      2 tablespoons water
      2 8 ounce cans tomato sauce
      1/2 cup freshly squeezed lemon juice
      2 drops hickory or mesquite liquid smoke (optional)

      Sauté onion and garlic in olive oil until translucent, but do not allow to brown. combine brown sugar, chili powder, salt, mustard, and remaining herbs to form a paste with the 2 tablespppons of water. Add liquid smoke, if desired (not necessary if you will be using an outdoor grill).
      Simmer mixture gently without covering, for 10-15 minutes, stirring occasionally, until mixture slightly thickens.

      Use this sauce to brush on chickens during the last 10-15 minutes of grilling or brush on rotisserie chicken as a basting sauce.

      Makes enough sauce for 2-3 chickens

      feeding that amount of people buy a cheap cut of meat, if you slow cook it it will tender up.

      figure 4 people per pound of meat.. I slow cook mine in the oven with some quartered onions and water….

      let it cool and shred it then put it in the crock with you fave BBQ sauce and some brown sugar.. yes you will need more than one crock.. one of those electric roasting pans would be best.

      Grilling – just brush the sauce onto chicken, ribs, steaks or chops while grilling.
      Broiling – same as above
      Baking – generously cover foods with BBQ sauce and bake until cooked through.

      Homemade BBQ Sauce
      (makes about 2 1/2 cups)

      Ingredients:
      2 tbl. olive oil
      1 medium onion, chopped
      2 cloves garlic, minced
      1 cup ketchup
      1/4 cup steak sauce
      1/4 cup cider vinegar
      1/4 cup dark brown sugar, packed

      2 tbl. worcestershire sauce

      Method:

      1/3 cup Worcestershire Sauce

      2 dashes Tabasco Sauce

      Place ribs in a large shallow roasting pan, meaty side up. (mine measures 14 x 10 1/2) Season meat with pepper and garlic powder. On each piece place a slice of unpeeled lemon, a slice of onion. Roast in a very hot oven (450 degrees) for 30 minutes.
      Drain grease from meat pan. Combine remaining ingredients in saucepan and bring to a boil and pour over ribs. Continue baking in moderate oven (350 degrees) until tender, about 45 minutes to an hour. Baste ribs with sauce every 15 minutes. If sauce gets thick, add more water.

      North Carolina Pulled Pork BBQ Sandwiches

      1 (5 to 5 1/2-pound) boneless pork shoulder roast
      2 cups cider vinegar
      1/4 cup packed brown sugar
      1 tablespoon red pepper flakes

      1 teaspoon salt
      Hot pepper sauce, to taste
      10 to 12 hamburger buns, split and toasted
      Coleslaw (optional)
      4 cups wood chips (use hickory or oak chips for the best flavor)
      For BBQ Sauce: In medium bowl, combine vinegar, brown sugar, red pepper flakes, Worcestershire sauce, salt and hot pepper sauce. Divide sauce into two portions; set aside.
      For Pulled Pork: At least 1 hour before grilling, soak wood chips in enough water to cover; drain before using.

      Place meat on grill rack over drip pan. Cover and grill about 4 hours or until meat is very tender. Add more preheated coals (use a hibachi or a metal chimney starter to preheat coals), wood chips and hot water every 1 to 1 1/2 hours.

      Using a fork, shred meat into long, thin strands. Pour sauce over shredded meat; toss to coat. Serve on toasted buns. If desired, top meat with coleslaw. Serve remaining sauce on the side.

      Using a fork, poke about 5 sets of holes in each chicken breast.

      Cut flank steak across grain on a diagonal into 1/4 inch slices. Place slices in a 1 gallon resealable plastic bag. Pour hoisin sauce mixture over slices, and mix well. Refrigerate 2 hours, or overnight.

      Preheat an outdoor grill for high heat. Discard marinade, and thread steak on skewers.
      Oil the grill grate. Grill skewers 3 minutes per side, or to desired doneness.

      “This was given to me by my friend, Elaine. It is one of the most delicious shrimp recipes for the BBQ I have ever had, and it is so easy.

      INGREDIENTS:
      2 1/2 tablespoons olive oil
      1/4 cup butter, melted
      1 1/2 lemons, juiced
      3 tablespoons brown mustard
      1/2 cup minced fresh basil
      3 cloves garlic, minced
      salt to taste
      white pepper
      3 pounds fresh shrimp, peeled and deveined
      skewers

      DIRECTIONS:
      In a shallow, non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, and garlic, and season with salt and white pepper. Add shrimp, and toss to coat. Cover, and refrigerate for 1 hour.

      Preheat grill to high heat. Remove shrimp from marinade, and thread onto skewers. Discard marinade.

    Need recipe for BBQ sauce without Worchestershire sauce.?
    I want a really good recipe for BBQ sauce made with real spices and no Worchestershire sauce in it. Sweet and spicy would be really good.

      Mango and Pepper BBQ Sauce
      about 2 1/2 cups
      Prep: 20 minutes

      Ingredients
      2 cups chopped red sweet pepper
      1/2 cup chopped onion
      2 tablespoons cooking oil
      2 medium mangoes, seeded, peeled, and chopped (2 cups)
      1/4 cup packed brown sugar
      2 tablespoons rice vinegar
      1/2 teaspoon crushed red pepper
      1/4 teaspoon salt
      2 tablespoons finely chopped green onion

      Directions
      1. In a large skillet cook the sweet pepper and onion in hot oil just until tender. Stir in the mangoes, brown sugar, vinegar, crushed red pepper, and salt. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until mangoes are tender. Cool mixture slightly. Transfer mixture to a blender container or food processor bowl. Cover and blend or process until nearly smooth. Stir in the green onion.

      2. To use, brush chicken, shrimp, fish, or pork with some of the sauce during the last 10 minutes of grilling. If desired, reheat and pass additional sauce. Makes about 2-1/2 cups.

      INGREDIENTS
      2 cans (15 ounces each) apricot halves, drained
      4 cups packed brown sugar
      4 cups cider vinegar
      1 can (29 ounces) tomato sauce
      2 cups ketchup
      1 cup maple syrup
      1 cup prepared mustard
      1/2 cup orange juice
      1/2 cup honey
      3 tablespoons salt
      1/2 cup molasses
      3 tablespoons chicken bouillon granules
      2 to 4 tablespoons crushed red pepper flakes
      2 tablespoons garlic powder
      2 tablespoons onion powder
      2 tablespoons soy sauce
      1 tablespoon pepper
      2 tablespoons Liquid Smoke, optional

      DIRECTIONS
      In a blender or food processor, puree the apricots until smooth. Pour into a large soup kettle or Dutch oven; add the next 17 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour or until flavors are blended, stirring occasionally. Stir in liquid smoke if desired. Cool. Store in the refrigerator. Yield: 4 quarts.

    What is your best summer BBQ/Grill recipe? (for those who love to grill/BBQ- and are backyard chefs)?
    Mine would have to be a combination on Bacon Wrapped Grilled Shrimp.

    I like to Wrap fresh or frozen shrimp with Bacon, smear on BBQ sauce (and add other secret ingredients); grill them up- cut up slices of lime and serve. Everyone I have ever served them to has made them dissapear in a matter of minutes!

    • ANSWER:
      I like to grill all the “normal” stuff such as steak, chicken, pork chops, hamburgers, etc. But I especially like to buy a slab of baby back ribs. I wash and peel the inside lining off…it’s a kind of thick film on one side. It’s sometimes a little hard to get off. Start at one end and continue peeling it all way across. I wash the whole slab with water, drain and then coat both sides with seasoned salt. I use McCormick’s or Lowry’s. They seem a little more potent than some others. I use a gas grill to cook mine, just because I don’t have a charcoal grill anymore, but charcoal would give it a better flavor for sure. To compensate I use hickory wood chips, soaked in water and put in a small smoker box. It’s small metal and has holes in top to let the smoke out. I put it under the grates so it will get hot. I also use indirect heat. By that I mean I don’t grill the ribs…I slow cook them on one end of the grill. Mine has 4 burners, so I can light the burner on one end and put the ribs on the other end with those burners not on. I put the thicker end toward the lit burner so it will get done a little more evenly and not burn up the thinner end. It will take about 3 hours to do them right. I put them on and check them after about an hour and a half. Sometimes I’ll turn them then, sometimes I’ll come back at 2 hours and turn them; depends on if it looks like it’s ready, also depends on how big and thick the ribs are. Once they’re turned, watch them more closely, checking about every half hour. During the last 30 minutes of cooking, slather both sides with copious amount of Sweet Baby Ray’s Hickory bbq sauce on each side. (I won’t use any other now that I’ve discovered the best) Everybody loves them. In fact, I was busy last time and didn’t get any-they ate them all before I got back in the house!

      Also, if you did use the charcoal grill, the same indirect heat effect can be achieved by lighting the coals and when they’re ready banking them up in a pile on one side and putting the ribs on the other side, as far away as possible from the heat.

      I can make good turkey legs. I put a dry rub on them and smoke them for about five hours or more. Slow and low is the key to good bbq.

      One day I needed some sauce and this is what I did:

      I used ketchup, A-1 sauce, Worcestershire, salt, pepper, sugar, mustard, garlic powder, onion powder and mrs. dash. It was unreal how good it was. Just play around with the ingredients. But use the ketchup as a base and build it from there tasting it after every addition to see if it needs more of this or that…….Sorry I don’t have exact measurements, but explore with this.

    Does anyone have a good recipe for Korean BBQ. I’ve been experimenting a lot and can’t find any that match the pre-made stuff they sell in the markets of Korea Town. Also, is there a secret to keeping it sweet during the marinade? Mine always comes out a little salty no matter how much sugar I use.

      2 1/2 pounds rib eye beef, thinly sliced
      2 tablepoons soy sauce
      2 teaspoons sesame oil
      2 teaspoons crushed garlic
      2 tablespoons brown sugar
      1 tablespoon rice wine (sake)
      Pinch of black pepper
      1/2 piece of fresh kiwi, juiced in a blender

      Dipping Sauce:
      1 tablespoon soybean paste
      2 teaspoons crushed garlic
      2 teaspoons red pepper sauce
      1 teaspoon salad oil
      2 tablespoons water

      1. Trim the fat off the beef with a knife. Distribute the sugar evenly on the beef by sprinkling it on each piece. Allow beef to sit for 10 minutes.

      2. In a separate bowl, mix together the soy sauce, sesame oil, garlic, sugar, sake, and black pepper. Put aside.

      3. Massage the beef with the kiwi juice using your hands. The kiwi works as a tenderizer. Add the soy sauce mixture and mix. Allow the beef to marinate for 10 minutes. Because the beef is thin, it doesn’t require a long marinating time. Now it is ready to be barbecued. Ideal if grilled over smoked wood but just as good in a frying pan or skillet. Cook until browned, being careful not to overcook.

      4. Last, to prepare dipping sauce, combine all sauce ingredients and cook over low heat for 15 to 20 minutes. Serve on the side.

      Here is the best oven BBQ brisket I’ve ever made. If you want to finish it on the grill, just take it out and put it on the grill, over a slow fire, for about the last hour. Just long enough to get some smoke flavor. A 7 pound brisket should take about 6 hours at 200, possbly a little longer. It holds well in the oven, so I usually bake them early and just re-heat them over the grill or in the oven depending on my schedule. I’ve even cooked them the day before and re-heated them the day of the party.

      “Cooking a brisket recalls an elementary law of physics. What happens to water at 212 deg. F.? It boils away. By cooking a brisket at 200 deg. all the inherent juices are saved and the meat is made more tender than you ever imagined. It is important that the cooking sack be completely sealed — a good method is to use what is called a drugstore wrap. here’s what you do.
      You’ll probably notice that a brisket is too wide to seal in one width of foil, so you will need to seal 4 sides. here’s how: Tear off 2 large equal lengths of foil. Lay 1 on top of the other. Now fold 1 side over twice, making a narrow 1/2-inch double fold. Open out the 2 sheets, and you’ll have a good seal on the bottom. Lay the meat on top of the seam. Coat all surfaces with the marinade. Now lift the 2 remaining sides of foil up and, holding them even with each other, fold over and over in 1/2-inch folds until you have a tight package. Press fold flat against the meat. This leaves only the ends. Fold these like you would a birthday present — into a kit shape — and then fold them under the meat.       When I cook this brisket, I do the whole thing after supper. The first night I make the marinade and place meat in the refrigerator; the next night I put it in the oven just before going to bed. By morning it is cooked to a turn. A good working woman’s scheme. You can eat this for several days without screaming.”

      Make a marinade of wine, molasses, soy sauce, peppercorns, salt, garlic, onions, and celery. (You can put onions and celery in processor until almost pureed.) Lay the boned and trimmed brisket on a large piece of heavy-duty foil and spread the marinade over all surfaces. Wrap the brisket tightly. Place in refrigerator and marinate for 24 hours. Open foil and sprinkle the brisket generously with freshly milled pepper. Reseal, place in a large open roasting pan (or jelly roll pan). Place in a 200-deg. F. oven and cook for 8 hours. Remove from oven. Rewrap the meat in a clean sheet of foil. Reserve pan juices and serve with warm meat. Good hot or cold on sandwiches.

      This is the best brisket recipe I’ve ever found. I always get raves on it. So easy, so good.

      1/2 cup achiote seeds
      2 cups water

      Soak achiote seeds in water for 2 hours.

      Wash hands well, then use hands to rub seeds together to release more color from the seeds. Water will be a dark red, muddy color. So will your hand. Achiote is used as a dye and food coloring agent (guess what colors your Cheddar cheese?) so it stains easily and deeply. I’ve taken to using a latex glove when rubbing achiote seeds for this dish — wash your hands WITH the glove on to rid the glove of its powder coating before handling seeds.

    I love making bbq chicken wings, but somehow I always mess it up.

    I have some “brown sugar bbq sauce” I bought at a local store and some chicken wings. I know I’ll probably need some other ingredients. I am thinking of cooking them in my toaster oven(I have a big toaster oven that has a “grill” function.

      spread the wings out on the tray. Bake about 30 minutes at 350F. Turn and bake about another 15 minutes. Baste with the BBQ sauce when you turn them over.

      First of all you would need to puree the tomatoes, because BBQ sauce doesn’t need to have big chunks of tomatoes. Here is a recipe I think you’ll enjoy.

      5 or 6 tomatoes depending on their size
      2 teaspoons salt
      2 teaspoons hot sauce (any brand)
      1/4 cup of brown sugar
      1/4 cup of honey
      1 teaspoon minced garlic

      Peel the tomatoes by boiling them for only 1 or 2 minutes. Let them cool and the skin will come right off. Puree tomatoes in blender or food processor. Mix pureed tomatoes with the remainder of ingredients. Enjoy!!!
