In another small bowl, use your fingers to mix the black pepper and cornstarch into the ground pork. Heat the wok and add 1 tablespoon oil in the wok on medium-high heat. When the oil is hot, add the garlic, ginger and green onion. Stir-fry for 10 seconds, then add the ground pork. Stir in the chili garlic sauce. Stir-fry until the pork turns white and is nearly cooked (about 1 minute), using a spatula to break the pork into small pieces.

      -You could bottle the whole fresh peppers in salt, sugar & vinegar. Let them pickle for a month or so and eat them use them whole as a garnish or on a relish tray.

      -You could also make a puree’ of the peppers, add in garlic, salt, vinegar & a little sugar to make a spicy chile paste.

      -Try adding in some chopped red peppers (1/2 C.), fresh chopped garlic (2-3 cloves), Chinese style fermented black beans (1/2 C.) Note: You can use the black bean & garlic paste found in jars or find the fermented black beans only pre-packaged, whole in the Asian markets, just soak in water & drain to remove some of the salt) & 3 T. chili oil (also found in Asian markets). In a med. hot pan, add in a little peanut oil, saute the garlic quickly, add in all the remaining ingredients. Smash up the whole beans a little. Heat through, mix thoroughly and let cool down. Place in an empty clean jar or plastic air tight container. It’s a great condiment…when eating Chinese food.

      There are two, the one that you mean is Asian Chile Paste: you can get it in green topped plastic jars in well stocked supermarkets in the International aisle……..

      There’s also one, just as good, but a bit more firey: Siracha. It comes in a squeeze bottle. You’ll find them just about next to each other…….Again, look in the Asian section of the International aisle of large well stocked supermarkets…….

    OK, so I’m making some chili and all the recipes that I’ve read say that I should cook it in a pot for 1.5-2 hours on low heat. The problem is that by the time I’ve finished a lot of the sauce has evaporated and it looks like I’ve got half the amount I started with! How can I prevent this?

      Keep a lid on the pot, the steam will condense and fall back into the pan. The only real reason you simmer chili for so long is to get all the flavors melded together. Also, put the flame under the pot low enough so it’s just simmering, not boiling! Trust me, you don’t want your chili to scorch on the bottom of the pot, so make sure you stir it every so often, or it’ll be a nightmare to clean up! Chili is like soup, it always tastes better the next day!

      I personally cook mine in a slow cooker for 10 hours.

      Ketchup or tomato puree mixed with a bit of vinegar and paprika. Also the shops in your area may sell a sweet chili sauce, it is nice added to this mix for added flavour, no heat is involved.

      Put your seeded peppers in a blender and puree them, Then put them in a sauce pot and let them cook on low heat for an hour or so. Put them back in the blender and puree some more and then drain through a fine screen colander. Take the resulting liquid and add salt and white vinegar to taste. The result will be very similar to green Tabasco, and will get better after a few weeks in the fridge. I don’t cook my red peppers but basically do them the same way, excepting I add salt and let them ferment after the first step. I also don’t refrigerate them, but I’ve never tried it with the green peppers, it may work fantastically or they might spoil.

      I get this figure by averaging the two shelf-lives of fresh and cooked salsa (which this recipe sounds the most like for classification purposes). They are the commercial versions – so they probably have preservatives in them which would mean that you should probably shave a few days off this estimate. So about 12 days.

      ive done that too. brought a big bottle of chilli sauce from a chinese supermarket but didnt know what an earth to do with it.
      For stir-frys, i use beansprouts, carrots, peppers, water chesnuts, shredded cabbage(sweet) and mushrooms. Add the chilli sauce at the end though as it can make the stir-fry quite watery. I also use chilli sauce as a dip when eating pizza, samosa’s etc.
      Try adding the sweet chilli sauce into your cooking as an ingredient so for example, add a splash into home-made curries.

      5 lb. tomatoes
      2 lb. chile peppers
      1 lb. onions
      1 cup vinegar (5% acidity)
      3 tsp. salt

      PROCEDURE: CAUTION: WEAR RUBBER GLOVES WHILE HANDLING
      CHILES OR WASH HANDS THOROUGHLY WITH SOAP AND WATER BEFORE
      TOUCHING YOUR FACE. Wash tomatoes and dip in boiling water
      for 30 to 60 seconds or until skins split. Dip in cold
      water, slip off skins, and remove cores. Coarsely chop
      tomatoes and combine chopped onions, peppers and remaining
      ingredients in a large saucepan. Heat to boil; and simmer
      10 minutes. Fill hot jars, leaving 1/2-inch headspace.

      8 ounces fresh red bird’s eye chilis, stemmed and finely minced
      2 tablespoons peanut or vegetable oil
      1 tablespoon yellow rice wine
      2 teaspoons dark rice vinegar
      1 tablespoon sugar
      2 teaspoons salt

      Cook chilis in oil over medium-low heat for 1 minute. Add rice wine and vinegar and simmer for another 3 minutes. Stir in sugar and salt. Remove from heat and let cool before transfering to storage container. Sauce and be stored in the fridge for up to 3 weeks

      You can thin it with a can of diced tomatoes on the stove, bring to a boil with a 1/2 to 1 cup of the chili sauce, reduce heat and simmer 10 minutes, then puree with a blender. That should help keep the sugars in the sauce from burning during baking.

      In a skillet or the dutch oven, brown 1 lb of ground beef in oil.
      Pour off excess fat if concerned. Combine with a chopped onion.
      Add 1 tsp salt, 1-2 tsp chili powder, 1 bay leaf, 1 tsp worcestershire sauce.
      Mix with 2 cans of chili sauce & 2 cans of kidney beans, drained, in pot.
      Cover & cook on high for 2-3 hours, remove bay leaf when serving.

      An excellent homemade sweet chili sauce recipe that is packed full of Asian style flavors and it won’t blow your head off with heat. Sweet Chili Sauce Recipe Makes 3-4 cups.

      Ingredients:

      5 large red chilies
      10 garlic cloves
      4 thumbs of fresh ginger
      8 lime leaves
      3 lemon grass stems
      1 cup fresh cilantro leaves
      1 1/2 cup sugar
      3.5 fluid oz cider vinegar
      1.5 fluid oz Asia fish sauce
      1.5 fluid oz Tamari
      4 tablespoons water
      Method:

      De-stem the chilies, peel the ginger and garlic.
      Place the chilies, garlic, ginger, lime leaves, lemon grass stems and cilantro in a food processor and blend to a coarse paste.
      Heat the sugar with the water in a saucepan until the sugar dissolves. Then turn up the heat and boil the syrup until it turns to caramel, this should be around 5 minutes. Stir in the paste mixture and bring back to the boil.
      Now add the cider vinegar, fish sauce and tamari and bring to the boil again and simmer for 2 minutes. Pour into sterilized jars and allow to cool before enjoying.
      Sweet Chili Sauce Tip: you can use basil & mint leaves instead of lime leaves.

      Combine all ingredients in a clean coffee grinder until mixed well.

      Rub the Roast all over and set in roasting pan, preheat oven to 250 and cook with the veggies for an hour per pound. When the roast has developed a crust, use the chili sauce for basting and add beef stock when needed if the chili sauce gets too thick. Enjoy

      Well if you have never tried Chingo sauce it is actually very similar to sweet chili sauce. Most Americans use it in meat in pies and enchiladas. If you can’t find Chingo sauce I believe Choncho dip has the same flavor…it’s not as sweet but it’s a little bit more bitter.

      Armor makes a good one—BUT don’t use the Italian flavored ones…it totally takes away from the chili sauce and grape jelly flavor and leaves a funny after taste. Been there. uurgh. My good grocery store brand has a really good meatball. I don’t know where you are from, but call and talk to the meat dept and see what they recommend. Note: the cocktail weenies also go great with the chili/grape recipe if you feel discouraged about trying the meatballs. Good luck.

    Is chili paste and chili sauce the same?
    I have a recipe that is a chicken glaze and it calls for chili paste but I couldn’t seem to find it at my local grocery store. I was wondering if I could use the chili sauce instead? Any ideas?

      Chili sauce is a blend of tomatoes, chiles, onions, peppers, vinegar, sugar and spices. Chili paste is made with dried peppers that are ground into a paste.

      Chili paste is more flavorful and piquant (hot!) than chili sauce. Chili sauce will not add as much flavor or heat to your dish, and depending on how much the recipe calls for, you will be adding unnecessary liquid, and probably salt, that may alter your dish.

      In most cases, you can add a chili sauce in a pinch and still have great food.

      Sriracha is the best chili paste ever! You can find it at your local Asian market, or specialty foods store. If you have a great ethnic isle in your local grocery store, you may be lucky enough to find it there. If you are serious about great chili paste and can’t find it locally, you can order Sriracha online for about plus shipping.

    how would you make a chili marinate sauce (Medium hot)?
    I was watching a cooking program the other day ,It was a old Keith floyd program, he made a Chili sauce then dipped the Chicken slices in the sauce and fried them, I think it was Mexican sauce, it was red and looked great, do you have a similar recipe or one of your own special sauces Chili or other?.

      Haven’t seen the show but here is something I can recommend.

      4 long red chillies (the most common in supermarkets, they are medium hot)
      juice of 1 lime
      2 cloves garlic
      1/2 teaspoon whole cumin seeds
      3 tbsp sunflower oil

      Chop everything up roughly including the seeds inside the chillies and combine in a blitzer.
      Pour over the oil and whizz to a sauce.
      if it’s too thick add a little water.
      This will work as a marinade for chicken or you could fold it through some thick greek yoghurt to brush over grilling fish.

      A spoonful of soured cream or creme fraiche is a tasty way of taking some of the heat out of a chilli sauce as a spoonful of yoghurt works with a curry.

    Recipe for a mild chili sauce using Jalapeno’s for preserving?
    I have a ton of Jalapeno peppers that I want to preserve. I am drying some and pickling some but I want to make a chili sauce that i can bottle. I want to use nas many jalapenos as possible but i want a mild/medium sauce. Does anyone have a good method or recipe that will preserve well?

    • ANSWER:
      Just find or make a standard chili sauce, and if you want a mild sauce to medium, take out the seed even roast some for a smoky flavour, and only add a few seeds to perk it up, if you cook the sauce the jalapenos will tone down to, just make sure to use a fairly acidic tomato or sauce, juice and a bit of tomato paste to the sauce and cook the peppers for a short time, this will cook the enzyme that causes raw peppers to go off in raw salsa’s.

      escona make a chilli sauce using scotch bonnet which are very very hot.
      i have just made my own………so easy!
      200g fresh scotch bonnet chilli,the juice of one lime,2oz suger,salt ,bunch of corianda,and tomatoe juice.
      blitz the lot up put int on the stove and simmer for 1 hour…
      this is fire!!!!!

    I have a recipe that calls for chili sauce. I do not have chili sauce on hand, however I have No Bean Chili. Is it the same thing? I’m making little smokies with “chili sauce” and grape jelly.

      No it is not the same thing, totally different. If you don’t want to go shop here is a different one I have that is good to. (Otherwise I always did the chili sauce & jelly too).

    Do you know a good substitute for packaged lump crab meat (shred) and/or ga can of green chili sauce?
    I have a recipe called “Crab and cream cheese enchaladas”. I have made the recipe before just as directed, and enjoyed it. I want to make this recipe again, but I recently moved and I’m not sure of a store that would carry the packaged lump crab meat (shred) or a can of green chili sauce. What would make an appropriate substitute for these ingrediants?
    The recipe is as follows:
    1-2 small packages of lump crab meat (shred)
    1 8 ounce package cream cheese
    1 small sour cream
    1 cup shredded cheese (cheddar/jack)
    1 cup cottage cheese
    1 teaspoon paprika
    1 tablespoon tabasco
    1 teaspoon garlic powder
    1 teaspoon salt
    1 teaspoon pepper
    1 can green chile sauce
    1 jar or package chicken gravy
    package flour tortillas
    jalapenos minced (optional)
    green onions choppen to taste
    Directions:
    Preheat oven to 325 degrees.
    Mix together cream cheese, sour cream, and cottage cheese.
    Then add paprika, tabasco, garlic powder, salt, and pepper.
    Mix well.
    Add shredded cheese, ………..
    (reserving some cheese to be sprinkled on top of enchaladas), jalapenos (optional), and shredded crab meat.
    Mix together.
    Spoon mixture into flour tortillas.
    Pour green chili sauce in bottom of pan.
    Place rolled enchaladas on top.
    Put chicken gravy on top of enchaladas.
    Top with shredded cheese.
    Bake for 30 minutes.

      Not sure about the green chile sauce, but if you go to the canned meat section – most stores carry crab meat there. If all else fails – use the fake crab from the seafood section (it will be spelled Krab) or shrimp.

      As for the chile sauce – check for an international section. You will probably be surprised at what you can find now in even the smallest towns…

      Chili sauce is usually near the ketchup. It’s kind of like ketchup but has some extra stuff like bell peppers and onions in it, and it’s usually a little sweeter than ketchup. If you can’t find it, you can probably substitute ketchup but might want to add some minced onion, bell pepper, maybe some garlic, and a little brown sugar.

      I just use the grape jelly & chili sauce. Just made it yesterday, and it is great! You can also use the little hot dogs to put in the sauce too. Good Luck!

    Anyone know the name of that Mexican dish with corn, mayonnaise & chili sauce?
    I used to get it all the time at a little stand in Aguascalientes–delicious! Not the corn on the cob with cheese–this was just a cup of corn with mayo, lime & you could add chili sauce…
    It wasn’t called elote (that is just corn in Spanish) & wasn’t trolelote either… It is annoying when I can’t think of a word…Anyone else know what I’m talking about?

      Hi!

      I’m from Monterrey City in Mexico and yes we call it “elote”. In other places they call it “trolelote” or “esquites”. Maybe “esquites” is the name you’re looking for? It’s the only one I can think of besides “elote” and “trolelote”.

      Anyway, they are all the same you just described: a cup of corn with mayo, lime and chili sauce. Those are the basic ingredients, but there are variations that include fresh white cheese, for example.

      NICK’S TURKEY CHILI

      2 lbs ground turkey
      2 medium onions, diced
      1 green pepper, diced
      1 red pepper, diced
      16 oz kidney beans, red (2 cans – drained)
      1 can Budweiser beer, more or less to taste and consistency
      16 oz can of tomato sauce
      1 can diced tomatoes (onion/garlic mix as well optional)
      2 cloves garlic (finely chopped or minced)
      2 tbs olive oil
      2 tbs cumin
      2 tbs chili powder
      1 1/2 tablespoons cayenne pepper
      1 tablespoons oregano
      1 tablespoons salt
      1 tablespoons ground mustard

      You will need a fairly large pot for this, 12X8 inches or so. First add the oil and brown the 2 lbs of turkey, drain any excess liquid.

      Add all of the vegetables, beans, tomato sauce, and diced tomatoes. Add beer until you reach the consistancy you desire, usually 1 – 1 1/2 cans or so.

      Mix in the garlic and spices. Simmer for 20 minutes, then reduce heat. The longer it cooks, the more the garlic taste will blend in with everything else.

      Usually I let some of the beer burn off and add a little more as I go. Goes very will with cheddar and sour cream, and of course cornbread. I imagine this recipe will also taste great with ground beef or even sirloin.

      Yes. Hormel makes canned chili that you can get with or without beans. I’m sure there are other brands too. You could always make it yourself. There are thousands of recipes online.

      Oh yeah, this one is easy:

      Brown a pound of ground beef.
      Add 1T paprika, 1t ground cumin, 1/2t garlic powder, 1/2t onion powder, and half a jar of salsa (I like On The Border), and 1 cup water. Cook as long as you want.

    Can you replace Chili sauce with Manwich Sandwich sauce?
    I’m trying to make swedish meatballs but i have limited ingredients. Can someone please help me! I have the grape jelly and other stuff but im stuck between chili sauce and manwich sandwich sauce. (the sauce for sloppy joe’s)

    • ANSWER:
      There is a sharpness to Chili Sauce not present in Manwich sauce. If you have *any* chili-based products (Sriracha sauce, chili garlic sauce) you could add them to the Manwich sauce; if you have any seafood cocktail sauce you could use it or mix it 50/50 with the Manwich. If you have none of these things but you do have either powdered chili (NOT Chili Powder with garlic, cumin, etc!) or horseradish, you could add a moderate amount to the Manwich sauce to get that “zing”.

      And if you have none of these things, just use the Manwich sauce. Taste how it comes out, and if it needs a little something more, grind up some black pepper into it, or add a dash of vinegar or lemon juice. Your guests will not notice, trust me…just wow ‘em with a nice place setting and a cool dessert :’)

    I’d like to can some chili sauce but am out of pint jars. Do I just increase processing time for quart jars?
    I BWB can and have had a bumper crop of tomatoes this year! I would like to can some chili sauce but all the recipes I have found that are safe for BWB are pint jars. I’m out. Can I put the chili sauce in the quart jars and just increase the processing time? How much? The recipe I would like to use calls for a 15 minute process.

      If you put hot sauce into hot jars, then you should still only need 15 minutes to process – just enough time to heat the air in the top of the jar and melt the seal on the lids.

      CHILI SAUCE

      3 green tomatoes, peeled, seeded & chopped
      1/2 c. chopped green onions
      1 clove garlic, pressed
      2 tbsp. chopped parsley
      1/4 c. chopped green chilies
      2 jalapenos, pickled
      2 peppers, seeded & minced
      1 tsp. ground coriander, soak in 1 tsp. water
      1/2 tsp. salt

      Chop all vegetables. Drain the water from the coriander and add it to all ingredients. Chill at least 1 hour before serving. This sauce keeps well in the refrigerator in a covered jar. One tablespoon chopped lambs quarters may be added to sauce if you wish. Yield: 2 servings.

    I am making a recipe today that calls for 1 cup of green chile sauce. I looked everywhere in the grocery store but couldn’t find anything. I finally settled on Ortega Green Taco Sauce. Will this work or does anyone know where I can actually get green chili sauce? Thanks!
