Recipe For Bbq Sauce

Ingredients:

2 tbs olive oil
1 small onion, peeled, chopped
2 garlic cloves
300g can peeled tomatoes, drained
2 tbs tomato puree
1 tbs brown sugar
1 tbs Worcestershire sauce

2 tbs white wine vinegar
1 tbs Dijon mustard

Preparation:

Place the oil in a saucepan over low heat, add the onion and cook for 5 minutes until softened slightly. Add all the other ingredients and bring to the boil. Reduce heat to medium and cook for 5 minutes, stirring, until
thickened slightly.

Set aside to cool slightly. Place in a blender and blend until smooth.

Store in an airtight container in the fridge for up to 2 weeks.

This is a perfect sauce for many barbecue chicken recipes, because it is simply delicious! Try it and you will see.

Barbecue Chicken Cooking Tips

For a quick test of doneness when roasting a chicken, hold on to the leg, move it around, and side to side. The leg should move freely at the joint if it is done. Be sure to use other methods for checking doneness also!

Do not overcrowd chicken pieces when cooking. Leaving space between them will allow them to brown and cook more evenly.

If using a marinade for basting, set some marinade aside before placing raw chicken in it to marinate. Never reuse marinade that the chicken was marinated in for basting.

Be sure to use a sharp knife when cutting or carving chicken. Sharp knives will make the job a lot easier, especially when having to cut in the joint areas, and will provide neatly cut slices and pieces.

      1/4 cup vegetable oil
      1 cup minced onions
      1/2 cup minced green peppers
      1 jalapeno pepper, seeded and minced
      1 pinch kosher salt
      1 pinch black pepper
      2 tablespoons minced garlic
      1 (28 ounce) can tomato sauce
      2 cups ketchup (preferably Heinz)
      1 cup water
      3/4 cup worcestershire sauce
      1/2 cup cider vinegar
      1/4 cup lemon juice
      1/4 cup molasses
      1/4 cup cayenne pepper sauce
      1/4 cup spicy brown mustard
      3/4 cup dark brown sugar, packed
      1 tablespoon chili powder
      2 teaspoons fresh coarse ground black pepper
      1/2 teaspoon ground allspice
      1 tablespoon liquid smoke (optional)

      Pour the oil into a large saucepan over medium-high heat.
      After oil has heated, add the onions, green peppers, and jalapenos and stir.
      Add a pinch of sa1t and pepper and cook until vegetables are soft and onions are golden.
      Add the garlic and cook for 1 minute more. Add remaining ingredients except the Liquid Smoke.
      Bring to a boil, then lower the heat so the sauce simmers.
      Simmer for 10 minutes.
      Turn off heat, add the Liquid Smoke and let the sauce cool.
      Pour it into a container, cover, and store in the fridge until ready to use.

      This is my recipe, compiled from several other recipes I’ve found. I picked the tastes I liked the most in the amounts that suit my taste and this is what I ended up with. Careful with the Chipotle – it can be HOT. Start with a small amount and add more after cooking if you need more heat.

      Chipotle Barbecue Sauce
      1 T vegetable oil
      1 small onion, finely chopped
      2 cloves garlic, minced
      2 cups ketchup
      1/3 cup brown sugar
      1 T Worcestershire
      1 T dry mustard
      1 T vinegar
      1-2 T chipotle paste (see note)
      1 t Italian seasoning

      Saute the onion and garlic in oil for 5-10 minutes or until tender. Add the remaining ingredients and cook for an additional 15 minutes. Use a stick blender to puree the sauce. Makes about 2.5-3 cups of sauce.

      Chipotle paste – blend 1 7-ounce can chipotle peppers in adobo sauce with ½ can water until smooth. Freeze any remaining in ice cube trays for use in salsa, chili or beef jerky marinade.

      Ingredients
      2 tablespoons chopped garlic
      2 tablespoons chopped ginger
      2 serrano chiles, de-stemmed, minced
      2 tablespoons, rinsed fermented black beans
      2 medium red onions, roughly chopped
      1 tablespoon sambal
      2 cups chopped fresh tomatoes (3 medium tomatoes) or drained whole roma tomatoes
      1/4 cup rice wine vinegar
      1/2 cup sweet soy (kechap manis) or 1/4 cup soy with 1/4 cup sugar
      Canola oil to cook
      Salt and black pepper to taste

      Method:
      In a skillet coated with oil, saute the garlic, ginger, chile, fermented beans and onions until brown, about 8 minutes. Add the sambal and tomatoes and stir. Deglaze with vinegar and add the soy. Simmer on very low heat for 15 minutes. Season and check. Using a hand blender or a food processor, blend thoroughly and re-check for seasoning. Chill.

      1 Pork loin, back ribs (at least 8 ribs, 3 to 5 pounds)
      1 free range chicken, broken down on the bone
      12 large shrimp, de-veined, peeled with tail on
      BBQ sauce
      For the ribs, cut in half if necessary to fit steamer. Season ribs with salt and pepper and steam for 45 to 60 minutes. The ribs should be fully cooked and softened. Prepare a medium-hot oiled grill. Season the ribs, chicken and shrimp then dip in the BBQ sauce and place on grill. Watch carefully and have a spray bottle of water handy to squelch flare ups. Rotate and turn the proteins often and brush with additional BBQ sauce. The shrimp will take only 8 minutes, the ribs and chicken about 15 minutes.

      dash kosher salt.

      Mix well and simmer over very low heat (crock pot is great) for 3-4 hours.

      a pinch of cayenne pepper
      1/4 teaspoon each thyme and marjoram
      a generous pinch of rubbed sage
      2 tablespoons water
      2 8 ounce cans tomato sauce
      1/2 cup freshly squeezed lemon juice
      2 drops hickory or mesquite liquid smoke (optional)

      Sauté onion and garlic in olive oil until translucent, but do not allow to brown. combine brown sugar, chili powder, salt, mustard, and remaining herbs to form a paste with the 2 tablespppons of water. Add liquid smoke, if desired (not necessary if you will be using an outdoor grill).
      Simmer mixture gently without covering, for 10-15 minutes, stirring occasionally, until mixture slightly thickens.

      Use this sauce to brush on chickens during the last 10-15 minutes of grilling or brush on rotisserie chicken as a basting sauce.

      Makes enough sauce for 2-3 chickens

      2 cups ketchup
      1/4 cup cider vinegar
      1/4 cup Worcestershire sauce

      2 tablespoons molasses
      2 tablespoons prepared mustard
      1 tablespoon Tabasco sauce
      1 tablespoon of your favorite barbecue rub
      2 teaspoons liquid smoke

      Combine all the ingredients in a nonreactive saucepan and bring slowly to a boil over medium-high heat.       * 1/3 cup honey

      Heat oil in a saucepan over medium heat. Add shallots and saute for 1 minute. Add balsamic vinegar and reduce by half. Add ketchup, brown sugar, and honey; bring to a simmer and cook for 5 minutes, stirring constantly.

      I whipped up some last night as I didn’t have any. This is what I did:

      1 sm can tomato paste
      3 TBS molasses
      2 TBS maple syrup
      4 TBS dijon mustard
      2 TBS mustard powder
      1 Tsp onion salt
      1 tsp garlic powder
      1/2 cup water
      2-3 TBS olive oil
      salt & pepper to taste

      You could also add a dash of worchestshire, and you could do all dijon if you don’t have the powder.

      If you don’t have molasses and/or maple syrup, add a few TBS of brown sugar. You could also add a few drops of liquid smoke if you like that smoky flavor.

      This version isn’t spicy at all.

      I just mixed it all in a sauce pan over medium low heat, until it was heated through.

      If it’s too thick, add more water and/or oil.

      This made a little over a cup of sauce, so double if needed.

      Cajun BBQ Sauce

      2 onions (minced)
      3 small bell peppers (minced and optional)
      1 clove of garlic (minced)
      1 tsp pepper, cayenne (you can leave this out if you don’t want it to be too spicy, but this is not that much!)
      1 tsp salt
      1 cup cornstarch
      2 cups water
      2 cups vinegar
      1 cup Worcestershire sauce
      1/2 cup liquid barbecue smoke marinade
      2 cups mustard
      2 cups tomato sauce
      1/2 lb butter
      1 cup sugar
      2 cups cooking oil

      Mix onions, bell peppers, celery, garlic, parsley, butter, cooking oil. Let cook 15 minutes, then put the rest of the ingredients in, mix well. Cook 25 minutes then put aside to cool.

      You can use this on all meats and poultry. This makes enough for a 4 person family bbq. Just double or triple the ingredients if you are having a bigger party. Once you make it one time you will get the hang of the portions!

      I can give the ingredients for a BBQ sauce that my family uses that sounds similar to Mr. Q’s. It would be good if I knew how red his BBQ sauce was or if it was more clear. If sauce has more redness to it then you will use more ketchup in the recipe below and if not, you will use less. The ketchup is what is going to give the BBQ sauce its thickness.

      Start off with a saucepan with Vinegar (about 2-3 cups) seasoned with black pepper and cayenne pepper (red pepper), add Louisiana hotsauce(about 1/2 bottle), add about 2 Tbsp. of margarine (you can add more). Add 1/2 cup water. Allow this mixture to roll to a boil, then let it simmer for about 5-8 minutes on low/med heat.

      Depending on how thick you want it, start to add ketchup, stir mixture and continue to simmer. I usually do add a pinch of sugar, but I guess you don’t have to if you don’t want to–it’s not someting you will taste in this recipe. This recipe will be more hot and spicy than anything—more akin to what you find on hot wings.

      This is a recipe that my family has used for years so it’s one that I just know how to make, thus no measurements so taste the sauce and decide what you think you need to add—it will usually be a little water, more cayenne pepper, or more ketchup. This recipe is also for at least a whole chicken with sauce left over so cut down on the items for less sauce.

      BBQ SAUCE

      2 tbsp. butter
      1/2 c. water
      1-2 c. ketchup (depends on what I said above)
      2-3 C. vinegar
      Black pepper
      Cayenne Pepper (red pepper)
      Dash of sugar—optional
      2 tbsp. mustard (add to original mixture)
      1/3-1/2 bottle Louisiana Hot Sauce (small bottle) any other similar hot sauce is fine. You may need more of this.

      Sorry my #’s aren’t exact, but in the South and in my kitchen somethings are just thrown in a pot and cooked from memory.

      Hot sauce to taste

      Baste with 1/2 c apple juice while cooking.

    I have tried a few recipes for BBQ sauce, one of which was supposed to be the same as KC Masterpiece. They didnt turn out how I had expected, they wernt smokey enough and they tasted too much like tomato/sweet and sour sauce! I live in the UK so some of the ingredients I had to use alternatives. The only thing I dont have is liquid smoke, but I do have some Ainsley Harriotts hickory BBQ marinade spray which I thought would be similar, but doesnt seem to be as strong as liquid smoke.
    Has anyone got a recipe for a quick/simple BBQ sauce, maybe similar to the one they serve at Hard Rock Cafe that is Smokey and sweet?

      I have two BBQ sauce recipes that are simple and good:

      Carolina Yellow BBQ Sauce
      -1 cup packed Brown Sugar
      -1/2 cup Apple Cider Vinegar (you can use any light-colored vinegar in a pinch)
      -1/2 cup yellow prepared mustard (French’s will do fine, don’t go with Dijon)
      –combine all ingredients in pan and cook over medium heat until hot and all sugar is melted

      Red BBQ Sauce
      -1 Cup packed Brown Sugar
      -1/2 cup Ketchup
      -1/4 cup worchestershire sauce
      -1/4 cup Apple Cider vinegar
      -combine all ingredients in pan and cook over medium heat until hot and all sugar is melted

      The above recipes are just the basics–you can season them up any way you wish. For spicy I like to add 1 Tablespoon of Cayenne pepper (dried) to either. The red sauce likes ginger and garlic. I never use the same spices twice when I make these, but they also never disappoint. Just remember to add the spices when you’re cooking so they incorporate better.

      4 Mexican dried chiles, seeded and stems removed

      1/2 white onion, diced
      3 cloves garlic, minced
      2 chipotle peppers, seeded and stems removed
      Place the ancho and Mexican chiles in a large saucepan and cover them with the chicken stock. Add the onion and garlic. Bring the stock to a boil over high heat, reduce heat and allow to simmer for about 15 minutes or until the peppers have absorbed some liquid and have become soft. Put the pepper mixture, cooking liquid, and chipotle peppers into a blender. Blend on low speed, increasing to high speed as the puree combines.

      Generous dab of honey (1 TAB)

      Combine in saucepan. Bring to a boil and simmer 10 minutes.
      Makes 2 cups, enough for 4 lbs of ribs

      1 (6 Ounce) Can Tomato Paste
      1 Cup Catsup
      1/4 Cup Karo Syrup
      4 Tablespoons Brown Sugar
      2 Lemons (Squeezed)
      6 Tablespoons Liquid Smoke
      8 Tablespoons Worcestershire sauce
      1/2 Teaspoon Louisiana Hot Sauce
      1 Cup Water
      1 Teaspoon Garlic Salt
      1 1/2 Teaspoon Onion Salt
      1/2 Teaspoon Black Pepper
      1/4 Teaspoon Marjoram Power
      1/4 Teaspoon Cumin Powder
      1/4 Teaspoon Thyme
      1/2 Cup Cooking Oil
      1/2 Cup Orange Juice
      1 Cup Wine (Cooking or other is fine)
      4 Tablespoons Grape Jelly
      4 Tablespoons Woody’s Cooking Sauce

      In a medium sauce pan, add water, cooking oil, liquid smoke, worcestershire sauce, brown sugar, and Karo syrup. Bring to a boil. Turn down to a simmer and add all the other ingredients. Again turn to a simmer, cook for at least 30 minutes, stirring frequently.

      BBQ SAUCE

      3/4 cup Ketchup
      1/2 cup Grape jelly
      1 tablespoon Chili powder
      1/4 teaspoon Ground black pepper
      1/8 cup Finely chopped onion
      1 teaspoon Lemon juice
      1 teaspoon Mustard
      1 teaspoon Worchestershire Sauce

      Heat all ingredients in a small sauce pan until the jelly dissolves. The sugar in the jelly will burn quickly so don’t apply any sauce until your meat is already done. This will keep the sauce from burning and ruining your dish. I think it goes great with burgers, hot dogs, smoked sausage, pork chops, chicken and yes even grilled salmon.

      Any good packer.
      ICC in Pennsylvania is a great packer.
      On the cheaper side you have Braswells( so many “co-packers” these days).
      The thing is some packers want a larger quantity than others.
      I think ICC does 100case lots. Not bad.
      Design a label and get going.

      PS.
      You just send them the recipe( they will not copy it or keep it).
      Their business is to make it to your specifications.
      They are insured if something goes wrong. You don’t produce it, they do.
      All you supply is the recipe. All you have to do is sell it.
      Do you think that Rao’s or Mario Battali packs there own sauces? Heck no.
      Co-packers do that.

      Bourbon Whiskey BBQ Sauce

      ” This is a barbecue sauce recipe using Kentucky bourbon whiskey. For best results, refrigerate for a day or two, allowing the flavors to blend. ”

      Ingredients
      a.. 1/2 onion, chopped
      b.. 4 cloves garlic, minced
      c.. 3/4 cup bourbon whiskey
      d.. 1/2 teaspoon ground black pepper
      e.. 1/2 tablespoon salt
      f.. 2 cups ketchup
      g.. 1/4 cup tomato paste
      h.. 1/3 cup cider vinegar
      i.. 2 tablespoons liquid smoke flavoring
      j.. 1/4 cup Worcestershire sauce
      k.. 1/2 cup brown sugar
      l.. 1/2 teaspoon hot pepper sauce

      Directions
      1 In a large skillet over medium heat, combine the onion, garlic and whiskey and saute for 10 minutes, or until onion is translucent. Add the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar and hot pepper sauce.

      2 Mix well and bring to a boil. Reduce heat to medium low and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

      Makes 4 cups

      Pepsi would be a fine substitute. You may want to try Dr. Pepper or even Root Beer. Both make for a tasty BBQ sauce!
